Look what my man brought into me last night! We think they are the best we've ever grown! This is the beginning of the end...we move from here to green beans...let the harvest begin!
Hello, I have visited your site the last week and have found a great interest in it. I have learned about the art of canning from my mother and grandmothers, but now with my own family I am trying to add more variety to the beans and tomatoes. What do you do with your winter onions. I was fortunate enough to obtain transplants of these a few years ago, but am lost as to what to do with them, you say these are the best you have gotten, is it becuase the roots are a lot trimmer normally, becuase mine are. Thanks so much, stop by my blog sometime.
Well girls, I guess you could ask "What don't you use the winter onions for?" We use them on homemade pizzas, hot dogs, cheesburgers, fried potatoes and onions are wonderful, bar-b-que, homemade salsa, big pots of chili, potato soup, hamburger soup, sandwhiches of any kind...except pbj...lol...no really I use alot and we love them plus they are good for you. They will lay on newspaper and dry now for a month of so. Thanks for asking:-)
Peggy - I'm so excited! I just have to share this with you because I know you'll understand: I just received a/my new-to-me pressure canner!! YAY! I found one on ebay that was being sold by a woman in the next town, about 15miles away!
I decided I could go a little higher on the price since I wouldn't be paying for postage - but I still think I got a fairly good deal. It's a Presto 17-qt size (holds 7 qt-sized jars), only used once.
AND she just delivered it to me at work - she works about 3 blocks away!
There is no instruction booklet, but with all the instructions you've given in your blog, plus talking to my mother back in Wisconsin, I should have few problems - and sources to go to when/if I do!
Does the month of drying allow them to be stored for the winter? I just grew my first batch of onions (and they look amazingly similar to yours- I must have done something right by accident! :)
I think they are about reading to harvest, but I want to make sure that I do the right thing so that they will keep as long as possible, either in my pantry or my garage. Your advice?? Thanks!

Well, the drying allows the skins to harden which will keep them longer. You will know when to use them...keep them nice and dry:-)
