Freezing Corn


Whew, as you no doubt are, I have been up to my elbows in corn. Years ago I tried to can it and while it was good, it could not touch the flavor you get by freezing it. Very easy to freeze ladies...just husk, wash off, blanch for 5-7 minutes, cool down rapidly, cut off husk and put into your zipper freezer bags.

I love learning from your site. Unfortunately my garden has not been giving me enough of ANYTHING to can or freeze! :( It is a challenge here with our sandy soil, but I KNOW it can be done, so I will keep plugging away. What method do you use to rapidly cool your corn?

Another way to freeze corn is to leave the husks on, stack in a paper bag or feed sack, and put in the deep freeze. Then when you want to use some, take them out, husk, and immediately use. They taste just like you pulled them from the field even months later!

It's the lazy man's way to do it. :)

I only planted 2 rows of corn (2x6') so we've been EATING our corn...don't think I'll have enough to freeze. :) Maybe next year.

Yum! I want to try corn again next year. The first year I tried it got infected with something horrifying and I haven't had the heart to try again after losing it all.

wow, I just found your blog and it is wonderful. I too truely enjoy putting food by. Its my favorite time of the year. Now I am wondering what tecnique your husband used to tie up that great cucumber trellis.

I just froze some corn with my mother-in-law today and she cuts it off with an electric knife first, then blanches it...turned out great and was super fast and easy.
